Here’s the recipe for my favorite easy muffins. They are always a crowd pleaser, freeze well and are perfect for a quick, healthy breakfast treat.

Heat oven to 400 degrees F. 

Lightly oil a 12 inch muffin tin

Ingredients:

1 1/2 cups of whole wheat flour

1 cup of rolled oats

1/2 cup raw shredded coconut

2 teaspoons baking powder

1 teaspoon baking soda

1 egg

3/4 of milk or unsweetened almond milk

1/3 cup olive oil

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

3 ripe bananas (the riper the better!)

Directions:

In a blender add milk, bananas, egg, coconut, vanilla and cinnamon.  Blend until liquified like a thick smoothy.

In a bowl, add flour, oats, baking powder and baking soda.  Stir.

Pour the liquids into the bowl with the dried ingredients and blend up until all ingredients are thoroughly blended.

Divide into 12 muffin tin.

Bake 20 minutes.

Remove and enjoy!
