If you’re seeking a quick & easy, super nutritious meal that is perfect year round, eaten hot or cold — this is my favorite go-to. It happens to be vegan, vegetarian and high protein with plenty of all natural antioxidants.
The ingredients are simple and the quantities of each can be easily adjusted based on your personal taste preference and the number of people being served. I usually make way more than would serve dinner for a group because this tastes absolutely delicious the next day cold.
2-5 sweet onions chopped coarsely
4-5 medium tomatoes chopped coarsely
3-5 cloves of garlic finely chopped
3-5 cans of low sodium, well-rinsed chick peas
1-2 hot peppers of your choice, finely chopped
1-2 heads of cilantro chopped
1 full lime
Drop about two teaspoons of olive oil into a big sauce pan, warm to heat and coat the bottom of the pan.
Add the onions and saute until golden
Add the chopped tomatoes and mix with onions
Add garlic. Then toss in the chick peas and add finely chopped
Stir and let simmer a few minutes
Add cilantro to taste. (I like lots!)
Squeeze in a whole juicy lime
Simmer a few more minutes and enjoy!
This would easily serve 6 people. But like I said, it’s delicious the next day re-heated or cold!
